Ofada rice is an unpolished, local variety grown mainly in Ogun State, Nigeria, around the town that gave it its name. Unlike the bleached white rice most homes grew up on, Ofada keeps its brown husk — which is why it tastes nutty, smells earthy, and fills you up the way imported rice never can.
Traditionally, Ofada is served with a rich, oily sauce called ayamase — green pepper, locust beans, palm oil, assorted meat. Our house blend leans a little redder, a little richer, a little more forgiving for people who do not want the heat to knock them over. We serve it wrapped in eeran leaves when you ask, the old way.
We have been cooking this sauce for years — first for weddings, then for office lunches, then for one stubborn customer who said, "Just give me the sauce. Keep the rice." That was how Ofada Magic became its own thing.
The sauce keeps 3 days in the fridge and up to 2 months in the freezer in an airtight container. Reheat on a low flame — never the microwave, the oil needs time to come back together.
